Banana Ice "Cream"



I don't know if I have ever been so excited to share a recipe.  So excited, that I didn't want to wait until daytime to do my photographs, so you'll have to forgive my orangey night photos.  I had heard about this recipe, how delicious it is, but it took trying it to make me a believer. This ice cream is made of bananas, and nothing else.  You can add a little milk, if you need to thin it down, but it is pure fruit, and truly amazing.  What makes it so good is the texture -- just like soft serve or thick whipped cream.



Start with three bananas, and cut them up into 1-inch chunks onto a plate lined with wax paper (learn from my mistakes, because you don't want these sticking to the plate) and put the plate in the freezer for at least two hours.


Dump banana chunks into your food processor or high powered blender, along with 1/2 cup milk (I used vanilla almond milk.  Coconut milk would also be really good), and pulse for 1-2 minutes until all of the chunks are broken up.  It can take a while.  You might need to go in with a spoon and mash things down.  Puree for another 1-2 minutes until smooth and fluffy.



This recipe makes enough for two desserts (my cup held half of the recipe).  I topped mine with a few bittersweet chocolate chips, and my husband added some chopped walnuts to his.  You could even add some peanut butter, if you like that sort of thing (yes, please)!  You can see how thick this ice cream is, because my spoon is standing right up.  Yum!!!

  4. I've also added cocoa, coconut, and other frozen fruit with mine (not necessarily all at the same time). If I want, say, strawberry ice cream, I'll use frozen strawberries and add just a bit of frozen banana to make the whole thing nice and creamy--strawberries by themselves don't cream up like bananas. Bananas also sweeten the whole thing.

  7. I made this last night and it was so yummy. It was creamy and delicious. I added graham crackers in my husband's and it was very good. I also tried it with pineapples, which was also way yummy. Thank you for this recipe. I am going to make this all the time.
